8-10 slices White Bread Slices                             
4 oz         Slices of Cold Meats, or cooked Shrimp     
1 cup       Mayonnaise                                     
1/2 cup     Shredded Cheese (e.g., Cheddar or Parmesan)

Instructions

1.  Position an oven rack about 4-5 inches from the broiler and preheat the broiler. 2.  Remove the crusts from the bread slices. Cut the bread into small decorative shapes, such as rounds, squares, or triangles, using a knife or cookie cutters. 3.  Arrange the bread shapes on a baking sheet. Top each piece with a small slice of cold meat or a piece of cooked shrimp. 4.  In a small bowl, thoroughly combine the mayonnaise and shredded cheese. 5.  Spread a layer of the cheese and mayonnaise mixture over each canapé, making sure to cover the toppings completely to the edges of the bread. 6.  Place the baking sheet under the preheated broiler. Watch very carefully and broil for 2-4 minutes, or just until the topping is golden brown and bubbly. They can burn quickly! 7.  Remove from the oven and serve immediately while hot.
