8 Ounces     Cream Cheese, softened       
3 Ounces     Soft Cheddar Cheese         
1 Ounce     Blue Cheese, crumbled

1 cup       Chopped Pecans (or other nuts)

Instructions

1.  In a medium bowl, combine the softened cream cheese, soft cheddar cheese, crumbled blue cheese, and finely chopped onions. Mix with a spatula or an electric mixer on low speed until thoroughly blended. 2.  Scrape the cheese mixture onto a piece of plastic wrap. Use the wrap to help shape the mixture into a uniform ball. Wrap tightly and refrigerate for at least 1 hour, or until firm. This step helps the flavors meld and makes the ball easier to handle. 3.  Spread the chopped pecans evenly on a plate or in a shallow dish. Unwrap the chilled cheese ball and roll it in the pecans, pressing gently to coat the entire surface. 4.  Serve immediately with your favorite crackers, pretzels, or vegetable sticks. The cheese ball can be made a day or two in advance and stored tightly wrapped in the refrigerator.
